Bounty bites
Have you ever wondered what homemade Bounty would taste like? Let me tell you: it is the same, coconutty, chocolatey, decadent treat you need, but with only unprocessed ingredients and the best quality chocolate. I give the Bounty a little Indian twist by adding a bit of cardamom, and nirvana is reached!
Recipe inspired from Vegan Richa's Indian Kitchen cookbook.
Ingredients
- Coconut centers
- 180g shredded coconut
- 9g coconut oil
- 110g sugar
- 1/4 tsp cardamom
- 80g coconut milk
- Coating
- 140g dark chocolate (50-70%)
Instructions
- Combine the shredded coconut, white sugar, and cardamom in a large bowl.
- Mix the coconut milk and coconut oil in a small saucepan. Bring to a boil, turn off the heat, and let cool for a few minutes.
- Add the contents of the saucepan to the large bowl and mix everything together. You can use your hands!
- Using a portioner, form balls/bars/ovals and place them next to each other on a baking tray lined with parchment paper. Refrigerate the tray for about 30 minutes to allow the coconut centers to harden.
- Melt the dark chocolate in a bain-marie and gently dip each coconut center into the melted chocolate using a fork. Make sure to cover the entire surface, and lightly tap the fork on the edge of the bowl to remove excess chocolate and prevent the chocolate layer from becoming too thick. Place the Bounties on the tray one by one and refrigerate for ~1h to allow the chocolate to harden.
- Enjoy as a sweet treat with your tea/coffee! Keep them chilled in an airtight container.
