Chickpea flour chocolate chip cookies
It is impossible to guess that these delicious cookies contain mostly chickpea flour, which makes them gluten-free! Even if you don't mind gluten, you have to try them!

Ingredients
- 7 g flaxseed meal
- 22 tbsp water
- 40 g maple syrup
- 20g molasses
- 65 g cane sugar
- 1-1.5 tsp vanilla extract
- 75g neutral oil
- 112 g chickpea flour
- 1/2 tsp baking soda
- 12 g almond meal
- 60-90 g chocolate chips
Directions
- Preheat the oven at 180°C (fan on).
- Mix the flaxseed meal with water in a mixing bowl
- Add oil, vanilla extract, maple syrup, molasses, raw sugar, and mix well.
- Add chickpea flour, baking soda, and almond meal. Mix well.
- Fold in the chocolate chips.
- Line an oven dish with baking paper.
- Using two tablespoons, scoop dollops of dough onto the baking paper.
- Bake for 10-15 min. Make sure you don't burn the cookies, they bake very quickly and will taste dry and bitter if you overcook them.
- Take them out of the oven as soon as they turn brownish.
- Let them cool down for a bit to manipulate them, and transfer them onto a cooling rack.
- Enjoy them just warm with your favourite hot beverage.
