Gâteau aux noix du Périgord (walnut cake)

Here is a cake from the South West of France, with a texture somewhere in between a fondant and a sponge cake, and with a delicious nutty taste...

  • Ingredients

    • 75g wheat flour
    • 11g baking powder
    • 1/4 tsp baking soda
    • 150g raw sugar
    • 250g unsweetened soy yogurt (if you used sweetened yogurt, just reduce the raw sugar amount a little)
    • 150g walnuts
    • 18g neutral oil
    • 1/2 tsp vanilla powder or essence
  • Instructions

    1. Preheat your oven at 180°C (fan on).
    2. Blitz the walnuts into a food processor to obtain very small pieces, almost like powder. The texture of the cake will be better the finer the pieces of walnuts are.
    3. In a mixing bowl, whisk together the yogurt and the sugar.
    4. Add the oil, vanilla powder/essence, and walnuts.
    5. Add the flour, baking soda and baking powder, mix well, and transfer the batter to a greased oven dish.
    6. Bake for ~25 min, or until a knife inserted in the cake comes out clean.
