Gâteau aux noix du Périgord (walnut cake)

Ingredients
- 75g wheat flour
- 11g baking powder
- 1/4 tsp baking soda
- 150g raw sugar
- 250g unsweetened soy yogurt (if you used sweetened yogurt, just reduce the raw sugar amount a little)
- 150g walnuts
- 18g neutral oil
- 1/2 tsp vanilla powder or essence
Instructions
- Preheat your oven at 180°C (fan on).
- Blitz the walnuts into a food processor to obtain very small pieces, almost like powder. The texture of the cake will be better the finer the pieces of walnuts are.
- In a mixing bowl, whisk together the yogurt and the sugar.
- Add the oil, vanilla powder/essence, and walnuts.
- Add the flour, baking soda and baking powder, mix well, and transfer the batter to a greased oven dish.
- Bake for ~25 min, or until a knife inserted in the cake comes out clean.
