No bake protein bars

This is another homemade bar recipe that will satisfy your sweet tooth, while ensuring a high protein content (~17% protein). It has lots of peanut butter, natural sweetener (maple syrup), and is gluten-free. It is very quick to make as it requires no baking whatsoever.

  • Ingredients

    • 150g oats
    • 60g protein powder
    • 50g crispy cereals
    • 130g maple syrup
    • 122g peanut butter
    • 1/2 tsp vanilla extract
    • 6g coconut oil
    • 30g dark chocolate
    • splash of plant-based milk (soy, oat)
  • Instructions

    1. Line a small square or rectangular dish with baking paper.
    2. Mix oats, crispy cereal and vegan protein powder in a mixing bowl.
    3. In another bowl, whisk together the peanut butter, maple syrup and vanilla extract.
    4. Mix the wet and dry ingredients together, adding a splash of plant-based milk if it is too dry and dense.
    5. Spread the mixture onto the baking paper, and even the level with a rolling pin.
    6. In a double boiler, melt the dark chocolate with the coconut oil. Drizzle on top of the mixture, and refrigerate until set.
    7. Cut into bars of desired length, and keep in an airtight container in the fridge.
