Peanut butter stuffed no bake cookie bites
A 4-ingredient no-bake cookie rolled around a luscious peanut butter center. A healthier dessert or snack that’s vegan and gluten-free.

22g rolled oats

48g pitted medjool dates

56g raw almonds

70g roasted, salted peanuts

134g cup crunchy or smooth peanut butter
- No-Bake Cookie Shell

432g pitted medjool dates

48g smooth peanut butter

90g dark chocolate chips

45g rolled oats
Instructions

Add oats, almonds and peanuts to the food processor and mix until small pieces remain.

Add dates and peanut butter and process until well combined.

Make 28 small balls and place on a parchment-lined tray and pop in the freezer to harden for ~15 min.
- No-Bake Cookie Shell
- Add oats and dark chocolate chips to the food processor and mix until small pieces remain.
- Add dates and peanut butter and process until well combined.
- Divide into 28 portions.
- Assembly
- Take the PB centers out of the freezer.
- Flatten each cookie shell into a disc and place a PB center in the middle. Fold back the edges to form a ball.
- Store in the fridge until all devoured!
