Sesame date cookies
These little bastards are so addictive, they will make for the perfect finger food for your next party or reception. Or movie watching binge.
Recipe inspired from Vegan Richa.
Ingredients
- 2 tbsp sesame seeds
- 112 g almond meal
- 2 tbsp starch
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 2 tbsp brown sugar
- 1 tsp vanilla powder, or add vanilla extract
- 50 g chopped dates
- 60 ml maple syrup
- 2 tbsp tahini
- 1 tbsp soy milk
Instructions
- Heat up a small frying pan, and toast the sesame seeds until they get just golden.
- Place them in a spice grinder and bring them to a powder.
- Add all dry ingredients except dates.
- In a separate bowl, mix all wet ingredients.
- Add chopped dates and mix well.
- Chill in the fridge for 30 min.
- Turn on the oven at 180°C.
- Using an ice cream scoop, make small balls and place them on a parchment paper. Flatten them slightly with your hands. You can wet your hands a little if the dough sticks to your skin.
- Optional: sprinkle a few sesame seeds on top of each cookie.
- Bake for 10-15 min.
- Take out of the oven, and let them cool down until they can be manipulated.
- Transfer to a cooling rack and let them cool down completely.
