South Indian sweet and sour tamarind rice
This is a well-known dish in South India. It makes for a very flavourful, sweet-and-sour side rice dish that pairs very well with lean dals such as sambar.

- 275g basmati rice
- 1 tsp tamarind paste
- 1 tsp mustard seeds
- 10 curry leaves
- 1/4 tsp cumin seeds
- 1/4 tsp whole black peppercorns
- 1/4 tsp fenugreek seeds
- 12g dried coconut
- 20g sesame seeds
- 1 tsp salt
- 6g neutral oil
- 6g sesame oil
- 20g peanuts
- 15g brown sugar
- 2 tsp rasam or sambar powder

Instructions
- Wash, and drain the rice.
- Mix together the mustard seeds, curry leaves, fenugreek seeds, black pepper corns, dried coconut and sesame seeds in a bowl.
- Heat up a pan and dry roast all these ingredients, but make sure not to burn them. Take them out of the pan and reserve.
- In the same pan, heat up the neutral and sesame oils and fry the drained rice over medium heat for a minute or two.
- In the meantime, add to the reserved spices the rasam powder, salt, peanuts and brown sugar.
- Add them all to the frying rice and mix well to coat the rice with the spices.
- Add ~450g water and the tamarind paste.
- Let it rice absorb the water, stirring regularly. Adjust the water content if needed to get the right consistency. Serve with a lean dal like sambar, and enjoy!
