Tomato rice with herbs

When you're looking for a simple way to brighten boring rice, simply adding some tomato and herbs goes a long way! This rice dish goes wonderfully with Moroccan lentils, and with any Mediterranean dish.

  • Ingredients

    • 180g white rice
    • 1/2 tsp salt
    • 1 tsp paprika
    • 16g tomato paste
    • 2 tbsp fresh basil leaves, chopped
    • 12g olive oil
    • 1/2 tsp asafetida powder
    • 200g chopped tomatoes
    • fresh parsley for garnish (optional)
  • Instructions

    1. Wash the rice thoroughly, drain, and reserve.
    2. Heat up the olive oil in a pan over medium heat, and add the asafetida powder.
    3. Add the washed rice, and keep frying the rice until it absorbs the oil.
    4. Add the tomatoes, tomato paste, salt, paprika, basil, and mix well.
    5. Add ~200 mL water, mix again, cover with a lid, reduce heat to low, and let it cook through.
    6. Serve hot with a legume dish (e.g. Moroccan lentils) and some vegetables or a fresh salad.
