Tomato rice with herbs
When you're looking for a simple way to brighten boring rice, simply adding some tomato and herbs goes a long way! This rice dish goes wonderfully with Moroccan lentils, and with any Mediterranean dish.
Ingredients
- 180g white rice
- 1/2 tsp salt
- 1 tsp paprika
- 16g tomato paste
- 2 tbsp fresh basil leaves, chopped
- 12g olive oil
- 1/2 tsp asafetida powder
- 200g chopped tomatoes
- fresh parsley for garnish (optional)
Instructions
- Wash the rice thoroughly, drain, and reserve.
- Heat up the olive oil in a pan over medium heat, and add the asafetida powder.
- Add the washed rice, and keep frying the rice until it absorbs the oil.
- Add the tomatoes, tomato paste, salt, paprika, basil, and mix well.
- Add ~200 mL water, mix again, cover with a lid, reduce heat to low, and let it cook through.
- Serve hot with a legume dish (e.g. Moroccan lentils) and some vegetables or a fresh salad.
