Trouchia
When I got a bunch of fresh silverbeet from the market, I knew I had to make a dish that would make this nutritious green shine. I dug into my recipe sources, and I realised that this vegetable is very popular in the South East of France. This is how I discovered "trouchia", a big omelet packed with silverbeet and originated from Nice. This vegan version uses silken tofu and chickpea flour for the batter, and the rest is super easy!

Ingredients
- 20g olive oil
- 400g silverbeet leaves
- 1/2 bunch parsley
- 5g crushed garlic
- 30g pine nuts
- 10g nutritional yeast
- 50g chickpea flour
- 12g corn starch
- 200g silken tofu
- 100 mL water
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1/2 tsp black pepper
