Zucchini chowder

No seafood? No problem! This wonderful, smokey soup made with zucchinis, potatoes & corn will delight your tastebuds, and warm you in the middle of winter.

Recipe inspired from the Cooking with Kindness Cookbook.

  • Ingredients

    • 20g neutral oil
    • 150g chopped onion
    • 5g crushed garlic
    • 750 mL water
    • 250 mL soy milk
    • 1 tsp smoked paprika
    • 1/2 tsp black pepper
    • 5 tsp veggie broth powder
    • 600g chopped potatoes
    • 500g shredded zucchini
    • 290g frozen corn
  • Instructions

    1. Heat oil in a large pot and fry onion for a few minutes to tenderise it.
    2. Add potatoes + garlic, and keep frying over medium heat for a few minutes.
    3. Add water, spices, bring to medium/low heat and let everything simmer until the potatoes are nearly done.
    4. Add ~1/2 of the shredded zucchini and stir.
    5. Keep on low simmer until potatoes feel completely done, add soy milk, and blend everything with an immersion blender.
    6. Add frozen corn and the remaining ~1/2 of the shredded zucchini, and keep it simmering for just a few minutes (don't overcook it)
    7. Serve with crackers.
