Roasted Brussel sprouts with tahini dressing

I knew I liked Brussel sprouts, but I just didn't know how to make them shine. Then I tried this roasted Brussels sprouts recipe, and I am now hooked! They are tossed in olive oil, paprika, salt, and black pepper, and served with a creamy tahini dressing balanced with vinegar, a touch of sweetness, and gentle garlic for a bold, nutty finish. Such a great way to eat your portion of veggies every day!
Recipe inspired from La Cuisine de Bernard.

  • Ingredients

    • Roasted Brussel sprouts
    1. 750g Brussel sprouts
    2. olive oil
    3. salt, black pepper, paprika

     

  • Instructions

    • Roasted Brussel sprouts
    1. Heat up the oven at 180°C (fan off).
    2. Wash the Brussel sprouts, and pat them dry with a clean towel.
    3. Cut the base of each sprout and remove the damaged leaves. Cut in half, and place in a large mixing bowl.
    4. Generously drizzle with olive oil, and season to taste with salt, black pepper, and paprika. Mix well.
    5. Transfer the Brussel sprouts on a baking tray lined with baking paper.
    6. Bake for ~20 min, or until they are soft but not burnt.

     

    • Tahini dressing
    1. Mix all ingredients!
